Hoppy Easter. This is a chocolate shell chia seed pudding with greek yogurt, chocolate drizzle, caramelised dates and banana.
I wanted to create something that had the joyful CRACK you get when you eat a magnum ice cream. I love chia seed puddings loaded with yogurt and toppings and so I made this.
So here’s what you’re going to do …
Shopping list
1/4 cup of chia seeds
1 cup of water
¼ block of chocolate
1 tbsp of coconut oil
Greek yogurt
Three dates
Half a banana - sliced
Little knob of butter (I think I used like half a teaspoon)
Method
Mix your chia and water to make a pudding consistency
Add water then stir - then stir again in a few minutes and then again few minutes after that - pop in the fridge while you melt your chocolate
Add your chocolate to a saucepan with coconut oil and melt over gentle heat
The coconut oil helps it melt and to harden later
Once melted, pour over your chia seed pudding and smooth out - this is going to be your chocolate shell
Place in your freezer for twenty minutes to harden
10 minutes before you remove from the freezer, get started on your caramelised dates and bananas
In a small fry pan, add your butter and your pitted dates
Allow them to sit for a few minutes and gently stir - you want them to soften and go gooey
Add your sliced banana and let it sit in the pan to caramelise
After two - three minutes, gently flip the banana slices and repeat
Do this gently or you will get banana goo
Take off the heat
Remove your chia pudding from the freezer
Add greek yogurt on top of the chocolate and smooth out
Top with your warm banana and dates
Drizzle extra chocolate on top if you want to
